Equipment for Wicked Pesto Pasta Recipe:
Pot
Water Jug with Filtered Water
Colander
Blender or Mini Ninja Blender
Slotted Pot Spoon
Liquid measuring cup
Ingredients For Wicked Pesto Pasta Recipe:
Kosher salt
8 oz. short pasta, such as fusilli
2 cups spinach (about 2 oz.)
2 cloves garlic, coarsely chopped
2 oz. cream cheese, softened, cubed *
1 oz. Parmesan, finely grated (about 1/2 cup)
1 cup fresh basil leaves (about 1 oz.)
1 Tbsp. fresh lemon juice
1/4 tsp. freshly ground black pepper
*= optional
Put all ingredients and equipment into a clean working space.
In the pot with boiling water, add olive oil and salt. Add and boil the pasta til al dente, about 6 to 8 minutes, or per the instructions on the pasta package.
Set aside a cup of pasta water. With a slotted spoon, remove the pasta from the pasta water.
Cook the spinach in the pasta water for 30 seconds until it is bright green.
Any longer and it will get darker and lose its vibrancy which makes it a “Wicked” pasta!
Then, in a colander, drain the spinach from the rest of the pasta water in the pot.
Run spinach under cool water until its cool to the touch and remove the moisture from it. Add spinach to the blender with garlic, cream cheese, Parmesan, basil, lemon juice, pepper, 1/4 cup pasta water, and the remaining 2 Tbsp. oil. Blend on high speed until smooth, about 1 minute.
(If the sauce is too thick to blend, add more water, 1 Tbsp. at a time, until the sauce is a thick, pourable consistency.) Season with salt.
Toss the cooked pasta in the green sauce and top with extra parmesan! Cool for 5 minutes before serving. Plate and bon appetit!

For those whose stomachs are sensitive to dairy like cream cheese, remove it from the recipe. It isn’t essential.
